Ingredients for salmon:
4 salmon fillets
2 tablespoons olive oil
Juice of one lemon
Salt and pepper to taste
Ingredients for mango salsa:
1 ripe mango, diced
1/2 red onion, finely chopped
1/2 red pepper, diced
Juice of one lime
1 tablespoon chopped fresh cilantro
Salt to taste
Preparation:
Mix olive oil, lemon juice, salt and pepper. Marinate the salmon in this mixture for 15 minutes. Preheat the grill and fry the salmon for 4-5 minutes on each side. For the salsa, mix all the ingredients in a bowl. Serve the salmon garnished with mango salsa.
