1. Gazpacho
Ingredients:
6 ripe tomatoes
1 cucumber
1 red pepper
1 green pepper
1 small red onion
2 garlic cloves
3 tablespoons olive oil
2 tablespoons red wine vinegar
Salt and pepper to taste
Preparation:
Cut all the vegetables into large pieces. Put them in a blender and mix until smooth. Pass the mixture through a sieve to remove the skins and seeds, then add olive oil, wine vinegar, salt and pepper. Mix well and refrigerate the soup before serving.
2. Okroshka
Ingredients:
200 g of boiled potatoes
200 g of fresh cucumbers
200 g of boiled sausage or chicken fillet
4 eggs
200 g radishes
1 liter of kefir or whey
Salt and pepper to taste
Greens (dill, green onions) to taste
Preparation:
Cut boiled potatoes, cucumbers, sausage (or chicken fillet), eggs and radishes into cubes. Mix all the ingredients in a large bowl. Pour the mixture with kefir or whey, add salt and pepper to taste, then sprinkle with chopped herbs. Mix well and refrigerate before serving.
