3. Cold beetroot
Ingredients:

2 medium beets
1 cucumber
1 potato
2 eggs
1 liter of kefir
Greens (dill, green onions) to taste
Salt and pepper to taste
Preparation:
Boil the beets and potatoes until tender, then cool and cut into small cubes. Chop the cucumber and eggs, add to the chopped beets and potatoes. Pour kefir over the mixture, add salt, pepper and chopped herbs. Mix well and refrigerate before serving.

4. Tarator (Bulgarian cucumber soup)
Ingredients:

2 fresh cucumbers
2 cups of yogurt
2 garlic cloves
1/4 cup walnuts
2 tablespoons olive oil
Salt to taste
Dill to taste
Water (to dilute to the desired consistency)
